White Egret Farm Goat Yogurt

The Probiogurt™ yogurt is a very special product. This yogurt is made from pure unprocessed goat milk, which has been cultured with a specific selection of friendly bacteria. These bacteria, called "probiotic", create many positive healthful benefits in the body, and it is these types of fermented foods that have been associated with populations around the world, who have become famous for enjoying long, healthy lives.

Probiogurt™ yogurt is different from any other that you can buy.

  • First, it is made with only two ingredients: pure unprocessed goat milk, and bacterial cultures. We use no starch or gum fillers to alter the texture. Therefore, this yogurt is a drinkable product.
  • Second, according to the recommendations of Dr. Jordan Rubin, this yogurt has been fermented 2-3 times longer than commercial cow or goat milk yogurts. The extra fermentation time allows the bacterial population to multiply and use up more of the lactose in the milk. By allowing the fermentation to go further, the bacteria turn the milk into a pre-digested protein source that is suitable for individuals with gastrointestinal and digestive problems.
  • Third, Probiogurt™ is carefully made by hand in small batches. This method of production does not stress the bacteria in the yogurt with the excessive heat and friction that comes with machine processing. Consequently, you are consuming friendly bacteria, which are alive, and have a high probability of establishing themselves in the gut. Further, you are receiving this product directly from the farm where it is produced, giving you maximum shelf life.

Probiotic Strains in White Egret Farm Yogurts

A number of our customers have asked about the strains of probiotic bacteria that are used to make White Egret Farm Yogurts. While we consider the proportion of strains to be proprietary, we can provide some general information.

We do not add any Streptococcus thermophilus or Bifidobacterium species to the yogurt culture. Those two groups of organisms have been of concern to certain groups of people. We do add Lactobacillus delbrueckii, and Lactobacillus delbrueckii subspecies, including lactis, bulgaricus, and leichmanii. For the very interested, several probiotics that once stood alone as independent species have now been incorporated into the species delbrueckii. Each species of probiotics produces its own antibiotic compounds called, bacteriocins. Secondary fermentation within the yogurt also produces large quantities of antioxidants. The purpose of using a mixed group of species, is to give the consumer the broadest possible protection and health benefit.
