WHITE EGRET FARM GOAT CHEESES
All
White Egret Farm goat cheeses are hand-made from the finest goat milk
available. All our goat cheeses start with GRADE A unprocessed milk
which is rapidly cooled to maintain a fresh sweet taste. None of our
processing requires that the milk be heated to a temperature higher
than 110° F. This type of processing preserves the natural nutritional
components of the curd, encourages the growth of healthful probiotic
bacteria, and creates a taste and texture that is "fresh" and not
"chalky" or "cooked". Subsequently, our cheeses are aged from 60 days
to one year.

Soft Cheese Descriptions and Serving Suggestions:
CHÈVRE
Description:
Our plain chèvre is a very mild, almost
sweet, tasting cheese with the consistency of a thick frosting. This
cheese, and all our cheeses, are fun to eat and good for you too. Each
ounce of our chèvre contains more probiotic Lactobacillus and Bifidus
bacteria than 8 human supplement tablets such as PB-8 ®
Serving Suggestions:
This soft spreadable cheese should be opened and allowed to breathe for
several minutes before eating. Delicate cheeses can pick up odors of
saran wrap or other plastics. Warm to near room temperature. This
chèvre is relatively low in fat; about 4 grams per ounce. It is
excellent as a spread on crackers, bagels, and vegetables, as a
stuffing for jalapenos and meat and pasta dishes, salads, a base for
cheese cake, and it is excellent in ethnic foods of all types, or any
recipe calling for cream cheese.
FRENCH PESTO CHÈVRE
Description:
A French herb pesto from Provènce
containing safflower oil, basil, marjoram, thyme and other herbs has
been added to a drier version of the plain chèvre described above.
Serving Suggestions:
Allow to breathe, and bring to near room
temperature before serving. This cheese makes an excellent spread for
crackers, bagels, sandwiches, salads, and can be used as a stuffing for
any kind of meat and pasta dishe.
GARLIC AND HERB CHÈVRE
Description:
A dried garlic and herb mix has been added to our plain chèvre described above. This cheese is the “adult” favorite.
Serving Suggestions:
Allow to breathe and bring to room
temperature before serving. This soft spreadable cheese is a favorite
for topping crackers, bagels, salads, and tortilla chips. It can also
be used to stuff celery, jalapenos, and meat and pasta dishes.
GOURMET HOT NACHO DIP
Description:
This gourmet hot nacho dip is made with a
soft chèvre, a Texas wine, chopped tomatoes, jalapenos, onions, and
spices. It is a favorite among Texans. The dip is not overly hot, but
has a slow after-burn.
Serving Suggestions:
It is best served after heating to soften the texture. It can be microwaved. Dip with taco chips and enjoy.
Hard and Marinated Cheese Descriptions And Serving Suggestions:
FARMSTEAD
Description:
This is a rich aged mild, slightly tangy hard cheese. It is a favorite among chefs for its flavor and versatility.
Serving Suggestions:
It is best served at near room
temperature. Its texture and melting properties make it ideal for pasta
dishes, salads, pizzas, or fillings for chicken or meat.
GARLIC-PEPPER FARMSTEAD
Description:
A flavored version of the aged Farmstead described above, this cheese is often used on cheese trays, or as an appetizer.
Serving Suggestions:
This cheese is a favorite served on
crackers, or as a filling for meat or chicken. It is best served
slightly cooler than the unflavored version.
GOUDA
Description:
Goudas are aged washed curd cheeses, which
makes them suitable for those with lactose intolerance, since the
lactose-containing whey is washed away during processing. The washing
step also creates the very smooth tight texture typical of gouda's.
This cheese is best when well aged. As it ages, it takes on a
flavor reminiscent of a very mild cheddar.
Serving Suggestions:
Serve after allowing to breathe for 10-30
minutes. Gouda's are most often served as sliced cheeses with
fruit, on sandwiches, or on cheese plates.
FETA
Description:
Feta is a traditional cheese which can be
made from cow, goat or sheep milk. It’s flavor can vary from mild to
quite strong. We have developed a variety of feta that is relatively
mild, but still maintains the salty aftertaste typical of feta’s which
have been soaked in brine.
Serving Suggestions:
Fetas are typically cut into small pieces
and used as a topping for salads. Rinse the portion of the cheese you
intend to eat in water or milk. Return any unused cheese to the salt
brine and store in the refrigerator. When stored in salt brine, the
cheese will keep nearly indefinitely. That’s the way it was
traditionally stored before everyone had a refrigerator in their
kitchen.
MARINATED FETA CHEESE
Description:
Our fine feta described above is cut into
small portions and added to a marinade containing olive oil, red
pepper, garlic, thyme and basil. After aging in the marinade the cheese
takes on a rich European type flavor. The cheese is packaged in
half-pint glass jars so that the cheese and herbs and spices are
visible. This cheese makes a wonderful gift.
Serving Suggestions:
Marinated feta can be served on salads or on a cheese plate. The oil can be used to stir fry vegetables or meat.
MARINATED BLUE CHEESE
Description:
Our fine hard-aged cheeses described above
are inoculated with our special blue-cheese mold, and further aged for
up to one year. The cheese is then cut into small portions and added to
a marinade containing olive oil, red pepper, garlic, bay leaves and
juniper berries. After aging in the marinade, the cheese is packaged in
half-pint glass jars so that the cheese and herbs and spices are
visible. This cheese makes a wonderful gift.
Serving Suggestions:
Marinated blue cheese can be served on salads or on a cheese plate. The oil can be used to stir fry vegetables or meat.
Skim Milk Cheese Descriptions and Serving Suggestions:
SKIM MILK MOZZARELLA
Description:
This cheese is a mild skim milk cheese,
with the stretchability and melting characteristics of a typical
mozzarella. It is especially low in fat.
Serving Suggestions:
This is an excellent cheese for shredding
on a pizza crust. It is also excellent sliced and served on a slice of
tomato topped with a basil leaf, and a drizzle of olive oil.
SKIM MILK COTTAGE CHEESE
Description:
This cheese is a rich fine-curd skim milk
cheese. It takes advantage of the fact that because goat fat globules
are one half the size of those in cow milk, the cheese actually tastes
rich, as if it was a full fat variety. This cheese is recommended by
many naturopathic physicians for their patients.
Serving Suggestions:
Eat plain, or with fruit or vegetables.
Goat cheeses share the
same advantages as goat milk in that they are hypoallergenic and easily
digestible. These features are due to the fine structure of the fat
globules (about half the size of those in cow’s milk), and to the
proteins which form curds much softer and finer than those from cow’s
milk.
Goat cheeses, like most other cheeses, can be frozen to store or ship.
